Executive Chef Job Description

Chain of command: Chef Team & Storeroom Assistants > Exec Chef > Directors

Summary:

The Executive Chef is responsible for the overall food and beverage operations at Bluefields Bay Villas. This includes oversight of 7 Villa kitchens, managing a centralized storeroom, management of the purchasing process and maintaining supplier relationships. The Executive Chef will also be responsible for leading 15 Chefs who make lunch, hors d’ouvers and a 3-course dinner each day for anywhere from 2 to 15 guests. The Executive Chef must have a strong culinary background and experience in managing large kitchens. They must also be able to work independently and as part of a team.

Duties & Responsibilities:
  • Manage seven (7) Villa kitchens, including ensuring that they are clean, organized and stocked with the necessary supplies.
  • Ensure the maintenance of the appliances and equipment.
  • Manage 15 chefs, including assigning tasks, providing feedback and training.
  • Develop and implement menus that meet the needs of our guests and are within budget.
  • Monitor food cost and wastage.
  • Provide training and quality management for the Housekeeping Team who prepare the guest breakfasts.
  • Tailor menus to dietary needs including accommodation for allergies, dietary restrictions, or special requests.
  • Continuous improvement of the food program through taking on guest and director feedback in creating the breakfast, lunch, snack, and dinner menus.
  • Total oversight of the order management system for the Resort, ensuring timely and accurate ordering of goods (including beverages).
  • Quality control of goods received and management of all storage areas to include cold, frozen, and dry storage.
  • Guidance to the Storeroom Assistants to ensure that food and beverage supplies are processed and delivered to the Villas in the correct quantities and on time.
  • Understanding of the relationship between the Villas and the Storeroom and managing the feedback loop.
  • Build and maintain relationships with suppliers.
  • Shop around suppliers for consistent and cost-effective prices.
  • Ensure that all food is prepared according to health and safety regulations, is timely in service and that guests are satisfied with the food and beverage service.
  • Responsible for conducting semi-annual reviews for all persons in his department

Qualifications
  • Culinary degree or diploma
  • Five (5+) plus years of experience as a chef, with at least 3 years of experience in a management role
  • Strong leadership and interpersonal skills
  • Open communication with other Resort teams
  • Excellent organizational and time management skills
  • Ability to work independently and as part of a team
  • Strong attention to detail
  • Commitment to providing excellent customer service

Executive Housekeeper (Negril, Jamaica) - Azul Beach Resort

To plan, direct, and control the activities related to the cleaning of rooms, public areas, and laundry, adhering to the authorized budget, and in accordance with the standards, policies, and procedures approved by Karisma Hotels & Resorts, aiming at exceeding the expectations of guests.

RESPONSIBILITIES:
  • To organize and distribute the work of the department according to the occupation forecasts, as well as to schedule work shifts, vacation times, and special permits for the collaborators working in the department.
  • To be familiar and to make sure that all personnel in her area is familiar with the ROH (Room of the House) and the rooms inventory, as well as with their main characteristics.
  • To control the consumption of stationery, supplies, and operating equipment, following the specifications and recommended safety measures.
  • To control the consumption of amenities in the rooms.
  • To carry out a monthly inventory, or at other times as required, of linen and operating equipment.
  • To make the daily assignment of activities to each housekeeper and to supervise that the room cleaning routines or tasks are carried out.
  • To follow up on the general room cleaning schedules.
  • To supervise the cleaning, appearance standards, and supplies, based on the appropriate check lists, as well as the preservation conditions and the operation of the furniture and equipment in the rooms.
  • To report any lack of compliance in the rooms to the corresponding department.
  • To control and safe keep master keys on a daily basis.
  • To educate and train the personnel in the department.
  • To supervise and follow up on the Supervisors’ and Housekeepers’ reports.
  • To supervise that the correct lost and found control and procedures are being carried out.
  • To follow up on comments made by guests on the GSS report and to fulfill the quality program.
  • To review and authorize the purchase requisitions and the warehouse requisitions for the department.
  • To follow up on the maintenance activities requested for the rooms and public areas.
  • To coordinate the preventive maintenance schedule with the Maintenance department, as well as to supervise it.
  • To follow up on the discrepancies report, as well as its immediate solution, when applicable.
  • To supervise the correct and timely execution of the night courtesy service.
  • To ensure the good use and operation of the work equipment in the Public Areas, Housekeeping, and Laundry departments.
  • To supervise the good conditions of the decoration and the appearance of the public areas and rooms.
  • To adhere to the safety and hygiene guidelines, the energy saving, environmental, and the internal civil protection programs, as well as any other applicable programs.
  • To be familiar with the handling and use of chemical products used in the operation in her areas, as well as to suggest the use of new products in a search for continuous improvement.

  • To produce the history card for each room.

Housekeeping Supervisor > General Manager (or Assistant)

Summary:

The Housekeeping Supervisor is responsible for leading a team of over 15 individuals in maintaining the cleanliness, order, and guest satisfaction across six villas and four suites. You will ensure our properties consistently meet the highest standards, exceeding guest expectations and contributing to the overall success of Bluefields Bay Villas.

Key Responsibilities:

Team Leadership:
  • Effectively supervise and delegate tasks to the housekeeping team, ensuring efficient and timely completion of cleaning duties across all assigned villas and suites.
  • Provide clear instructions, training, and support to team members, fostering a positive and productive work environment.
  • Monitor performance, identify areas for improvement, and coach team members to enhance their skills and knowledge.
  • Address any performance issues or concerns with individual team members and take appropriate action as needed with the guidance of the Human Resources Manager and the Ownership Team.

Quality Assurance:
  • Conduct regular inspections of all villas and suites, ensuring adherence to established cleaning procedures and maintaining high standards of cleanliness and presentation.
  • Respond promptly to guest requests and concerns related to housekeeping services, addressing any issues with professionalism and a guest-centric approach.
  • Oversee the proper care and maintenance of all furnishings, linens, and amenities within the villas and suites.
  • Manage the amenity stock with the Storeroom.
  • Maintain accurate inventory of cleaning supplies and equipment, ordering replacements as needed.
  • Keep a report of deliver all ripped/frayed or stained linens to the office for removal from property.
Communication and Coordination:
  • Coordinate effectively with other departments, such as maintenance and Guest Services, to ensure the smooth operation of building maintenance projects, high dusting, landscaping projects, etc.
  • Communicate clearly with management regarding team performance, guest feedback, and any logistical or resource needs.
  • Develop and maintain clear documentation and communication channels to ensure efficient task allocation and seamless housekeeping operations across all villas and suites.
  • To include cleaning logs and checklists.
Scheduling and Logistics:
  • Develop and implement efficient cleaning schedules, considering daily assignments, guest arrivals and departures, and turn-down services.
  • Work with Human resources to ensure efficient allocation of resources and tasks, considering staff availability and workload demands.
  • Respond effectively to unexpected changes or disruptions to the schedule, maintaining a high level of service and guest satisfaction.

Qualifications:
  • Minimum three to five (3-5) years of experience in supervisory housekeeping roles within the hospitality industry.
  • Strong leadership skills with the ability to motivate, train, and develop a team.
  • In-depth knowledge of housekeeping procedures, cleaning techniques, and hospitality standards.
  • Excellent communication, interpersonal, and problem-solving skills.
  • Strong organizational and time management skills.
  • Ability to work independently and as part of a team in a fast-paced environment.
  • Commitment to providing exceptional customer service.

WEDDINGS MANAGER

The successful candidate will be responsible for the achievement of customer satisfaction and financial objectives of the Wedding and Romance department. He/she will facilitate the flawless execution of each phase of the wedding cycle from sales & pre-event planning to event execution & post-event deliverables.

Specific Requirements/duties of the position include:
  • Meeting prospective clients, conducting site inspections and finalizing sales arrangements
  • Hosting travel trade and wedding-planner trips
  • Participating in wedding expos, trade fairs, workshops, seminars
  • Conducting post-wedding assessments for continuous improvement
  • Ensuring adequate, consistent and accurate documentation, submission and delivery of marriage licenses.
  • Maintaining an organized filing systems for departmental records and reports.

Qualifications and Experience
  • BSc. Hospitality Management or Business Management
  • Minimum two (2) years’ wedding or social-event service management in a full service, luxury hotel or resort operation
  • Proven experience in event and menu planning
  • Knowledge of government requirements, documentation, procedures & standards for weddings
  • Knowledge of wedding requirements, décor, styles, customs and traditions
  • Ability to work independently as well as part of a team

LINEN ROOM ATTENDANT

CORE FUNCTION

  • Responsible for the department’s linen control measures and housekeeping supplies.
DUTIES AND RESPONSIBILITIES
  • Check off the linen received from the laundry.
  • Report and resolve all linen discrepancy with the laundry supervisor.
  • Maintain an organized and clean linen room.
  • Pack the Room Attendant trolley according to the set par by 8:30 am daily.
  • Maintain proper daily record of all linen issued and returned
  • Complete the daily linen control comparison worksheets at the end of each day.
  • Package the linen to be collected by the laundry truck.
  • Monitor the housekeeping supplies and ensure adequate stock is available at all times.
  • Follow up with maintenance on all items sent for repair.
  • Relief room attendants when necessary.
  • Keep an accurate and current record of the lost and found items.

ROOM ATTENDANT

CORE FUNCTION

  • Responsible for cleaning and servicing a maximum of 14 guest rooms daily.
HOUSEMAN

CORE FUNCTION
Ensure room blocks, walkways and food and beverage areas are kept clean and sanitary at all times.

DUTIES AND RESPONSIBILITIES

  • Collect linen supplies and take them to assigned areas.
  • Ensure that blocks, corridors, staircase, gym are cleaned daily using brooms and mop.
  • Remove rubbish from the blocks to the garbage disposal area.
  • Collect soiled linen from the blocks and take it to the laundry room.
  • Take mini fridges and furniture to and from the guest rooms.
  • Clean the top of : the TV, mirrors, drapes and ceilings with mildew or spots in check out rooms.
  • Sanitize the checkout rooms with electronic sanitizer according to protocol.
  • Use cleaning agents, materials and machinery in accordance with housekeeping procedures.
  • Scrub public areas as scheduled.

Housekeeping - Work Pressure
WORK PRESSURE
  • Required to work six (6) days per week including Public Holidays
  • Lifting heavy items
  • On feet for the entire shift
  • Going up and down stairs

LIFEGUARDS

Lifeguards are responsible for ensuring the safety of all guests engaged in watersports activities or using the resort’s aquatic facilities by preventing and responding to emergencies.

Specific Requirements/Duties of the Position Include:
  • Maintaining visual contact of guests during their use of equipment and being fully prepared to render prompt assistance.
  • Responding immediately and appropriately to secure safety of patrons in the event of emergency.
  • Identifying and reporting any observed signs or symptoms of illness/injury of a rescued victim to the nurse and the Dive Supervisor and Manager.
  • Providing emergency care and treatment as required until the arrival of emergency medical services.
  • Presenting professional appearance and attitude at all times and maintaining a high standard of customer service

Qualifications and Experience:
  • High School Leaving certificate
  • First Aid & CPR Certified
  • Valid lifeguard license
