Executive Chef (Negril, Westmoreland, Jamaica) - Azul Beach Resort (KMS Jamaica Limited)


 To manage the appropriate operation of the Culinary Department, verifying all details concerning presentation, quality of the food, and aspects of the kitchen department.


RESPONSIBILITIES:

GENERAL:

  • To wear a clean, complete uniform, according to the standard.
  • To participate in the shift’s briefing.
DAILY RESPONSIBILITIES:
  • To monitor the attendance and punctuality of the staff, as well as their cleanliness and personal hygiene.
  • To organize and distribute all kitchen work
  • To propose and update, in coordination with the Food and Beverage Manager, the menus for the outlets of the Hotel, based on the popularity of dishes and the search for new gastronomic proposals.
  • To prepare the requested special Menus, as well to develop the various recipes and verify their preparation.
  • To direct and oversee the preparation and seasoning of dishes prepared in the various kitchens, guaranteeing the fulfillment of the conditions imposed by the recipe book and the food presentation standard.
  • To personally prepare some dishes when appropriate.
  • To supervise the reception of products and make sure that the appropriate rotation of raw materials is carried out in storerooms and Walk Ins.
  • To monitor the appropriate administration of provisions and raw materials, making orders as necessary and setting minimum and maximum stock amounts for the storage room and each consumer center.
  • To oversee the set up and decoration of food displays in outlets and special events.
  • To monitor all activities performed by the Steward Area.
  • To maintain daily communication with the Chief Steward and the Food and Beverage Manager carrying out operation tours of all outlets.
  • To carry out and coordinate quality tests.
  • To control everything related to the culinary department including days off, shifts, schedules, vacation times, special permits, disciplinary sanctions, productivity control of his staff, education and promotion.
  • To make sure that the operation flows according to the Hygienic Food Handling program procedures.
  • To control the cost of foodstuffs, never neglecting the quality of products used in preparation.
  • To monitor that the preventative and corrective maintenance operation s activities are carried out on the facilities and equipment in the kitchens.
  • To supervise monthly inventories.
  • To prepare Culinary Annual Operations Budget, in coordination with the Food and Beverage Manager.
  • To conduct bi-annual performance evaluations established by the Vice-president for Food and Beverage Operations.

EXECUTIVE SOUS CHEF

The Executive Sous Chef is responsible for all culinary activities for the restaurant. This position will oversee all operations in the kitchen, train personnel, plan menus, oversee product purchasing, and manage the budget.

Specific Requirements/Duties of the Position Include:
  • Designing new recipes, planning menus, and selecting plate presentation.
  • Ability to maintain a level head while delegating multiple kitchen tasks simultaneously.
  • Strong hands-on knowledge of various international cuisines.
  • Setting departmental targets and objectives, work schedules, budgets, policies and procedures.

Qualifications and Experience:
  • Graduate of an internationally recognised culinary institution or technical/vocational training school.

  • Working knowledge of Food Safety and International Health Regulations.
  • International experience would be an asset.

Summary:

The Storeroom assistant is responsible for all goods and services related to the company stored within the Storeroom. You are entrusted with the responsibility of receiving, storing, and issuing supplies and equipment for the day-to-day villa operations under the direct supervision of the Storeroom Manager. The cleanliness and proper order of the Storeroom is paramount in being successful in this position. You must take initiative and be able to identify and complete tasks on your own without prompt. The success of each villa and the services offered, especially via food and beverage, depends highly on you and how seriously you take this job and the delivery of your services. This is a high stress and physically demanding position and as such you must be able to always manage stress and intense labor professionally, as these situations present themselves.

Duties and Responsibilities:

  • Monitor par levels for all food items to ensure proper levels at ALL times
  • Ensure storage of both food and beverage and operational stock as guided by MoH standards
  • Day to day checks of the Storeroom for proper hygiene and full compliance is mandatory
  • Assist with supplier delivery and ensure that all goods supplied are as per agreed order/purchase and all matches the delivery note
  • Be able to identify and refuse faulty and substandard goods
  • Accurately weigh out food items for villas
  • Assemble drinks/ food items for villas in the morning and afternoon
  • Help move newly delivered items around storeroom
  • Properly dispose of used liquor bottles

Coordinates smooth daily operations of the Butler department, ensuring that all Butlers have the tool necessary to carry out their daily tasks. Managing budget and coordinating supplies.

JOB FUNCTIONS:
  • Successfully completes training/certification of all Butlers.

  • Receiving (and checking in) guests.

  • Timely submit schedule, payroll, meeting minutes, reports & requisition
  • Updates and manages the hotel systems, by registering and maintaining the Guest's information during their stay, generating a database that will serve for future stays.
  • Creates follow-up reports to VIP guests & Members, to obtain relevant information, as well as a history of their preferences prior to arrival.
  • Coordinates the control and handling of guests´ luggage during check-out, check-in, and room changes. Safekeeping in an efficient careful manner.
  • Provides a tracking service for lost luggage.
  • Recommend disciplinary actions where necessary.
  • Familiarize yourself with the hotel’s emergency manuals and procedures.

QUALIFICATIONS:
  • At least 2 years’ experience as a Butler
  • Thorough knowledge of hotel services and amenities.
  • Ability to train, coach, counsel, develop employees according to SOP
  • Ability to be a leader and build a team.
  • Ability to satisfactorily communicate in English with guests / visitors, management and co-workers to their understanding.
  • Ability to perform basic mathematical computations.
  • Ability to provide legible communication and directions.
  • Ability to work long hours even without being told

Executive Housekeeper (Negril, Jamaica) - Azul Beach Resort

To plan, direct, and control the activities related to the cleaning of rooms, public areas, and laundry, adhering to the authorized budget, and in accordance with the standards, policies, and procedures approved by Karisma Hotels & Resorts, aiming at exceeding the expectations of guests.

RESPONSIBILITIES:
  • To organize and distribute the work of the department according to the occupation forecasts, as well as to schedule work shifts, vacation times, and special permits for the collaborators working in the department.
  • To be familiar and to make sure that all personnel in her area is familiar with the ROH (Room of the House) and the rooms inventory, as well as with their main characteristics.
  • To control the consumption of stationery, supplies, and operating equipment, following the specifications and recommended safety measures.
  • To control the consumption of amenities in the rooms.
  • To carry out a monthly inventory, or at other times as required, of linen and operating equipment.
  • To make the daily assignment of activities to each housekeeper and to supervise that the room cleaning routines or tasks are carried out.
  • To follow up on the general room cleaning schedules.
  • To supervise the cleaning, appearance standards, and supplies, based on the appropriate check lists, as well as the preservation conditions and the operation of the furniture and equipment in the rooms.
  • To report any lack of compliance in the rooms to the corresponding department.
  • To control and safe keep master keys on a daily basis.
  • To educate and train the personnel in the department.
  • To supervise and follow up on the Supervisors’ and Housekeepers’ reports.
  • To supervise that the correct lost and found control and procedures are being carried out.
  • To follow up on comments made by guests on the GSS report and to fulfill the quality program.
  • To review and authorize the purchase requisitions and the warehouse requisitions for the department.
  • To follow up on the maintenance activities requested for the rooms and public areas.
  • To coordinate the preventive maintenance schedule with the Maintenance department, as well as to supervise it.
  • To follow up on the discrepancies report, as well as its immediate solution, when applicable.
  • To supervise the correct and timely execution of the night courtesy service.
  • To ensure the good use and operation of the work equipment in the Public Areas, Housekeeping, and Laundry departments.
  • To supervise the good conditions of the decoration and the appearance of the public areas and rooms.
  • To adhere to the safety and hygiene guidelines, the energy saving, environmental, and the internal civil protection programs, as well as any other applicable programs.
  • To be familiar with the handling and use of chemical products used in the operation in her areas, as well as to suggest the use of new products in a search for continuous improvement.
  • To produce the reports required from the housekeeping, public areas, and laundry departments.
  • To produce the history card for each room.


JOB PROFILE:
  • B. A. in Business Management or a related degree.
  • At least 4 years in a similar position in a 5 stars hotel.
