Head Sommelier (St. James, Jamaica) - Secrets/Breathless Resorts & Spa

 JOB SUMMARY:



The Head Sommelier will be responsible for managing the hotel’s wine program, including the selection, procurement, and serving of wines in our dining outlets and private events. The ideal candidate will have a deep knowledge of wines, exceptional customer service skills, and a passion for educating staff and guests about wine pairings and trends. As a key member of the Food and Beverage team, the Head Sommelier will ensure that the hotel’s wine offerings are of the highest quality and enhance the overall guest experience.


Key Responsibilities:
Wine Selection & Inventory Management:
  • Curate and manage the hotel’s wine list, ensuring a diverse and high-quality selection of wines from various regions and varietals.
  • Maintain optimal stock levels and work closely with vendors to source new wines, ensuring that inventory is rotated and well-kept.
  • Collaborate with the kitchen team to develop wine pairings that complement the menu offerings.
Guest Interaction & Service:
  • Interact with guests to offer personalized wine recommendations based on their preferences and menu choices.
  • Create memorable experiences by offering wine flights, private wine tastings, and educating guests on wine regions, production methods, and flavors.
  • Ensure that wine service standards are consistently followed.

Event Management:
  • Oversee wine service for special events, private dining experiences, and large-scale banquets.
  • Collaborate with event planners to develop wine lists for various events and ensure proper service during events.
  • Maintain Wine Knowledge & Trends:
  • Keep up to date with global wine trends, industry innovations, and new product offerings.
  • Attend wine tastings, seminars, and relevant events to continue professional development and stay informed about industry changes.
Administrative & Reporting:
  • Manage wine-related budgets, monitor costs, and ensure that financial targets for wine sales and profitability are met.
  • Report on inventory, sales trends, and guest feedback regarding the wine program to the F&B Manager.
Qualifications
Education and Certification:
  • WSET Level 3 or equivalent certification in wine is required. A diploma or higher qualification (e.g., Master Sommelier) is highly preferred.
  • Continued professional development in wine and sommelier-related courses or certifications is a plus.
Experience:
  • At least 5 years of experience working in a sommelier role, with at least 2 years in a leadership or management position.
  • Experience in a fine-dining restaurant or luxury hotel setting is highly desirable.
  • Proven track record of managing wine lists, staff training, and enhancing the guest experience.

STOREKEEPER

The storekeeper is responsible for maintaining and managing inventory, ensuring that stock levels are adequate, and overseeing the efficient and safe operation of the storage area. The ideal candidate will have strong attention to detail, excellent organizational skills, and the ability to work independently.

Specific requirements/duties of the position include:
  • Verifying all deliveries and issues before entering or leaving the storeroom.
  • Issuing equipment and supplies against approved requisitions.
  • Checking inventory items and reconciling with the perpetual inventory system.
  • Supporting employees engaged in sales, inventory-taking, and reconciling cash receipts.
  • Examining merchandise.
  • Completing requisition forms for inventory and supplies.
  • Notifying the manager and/or supervisor of low stock levels in a timely manner.
  • Inspecting deliveries and date times to verify freshness, cleanliness, consistency, and quality throughout case lots.
  • Adhering to food safety and handling policies and procedures across all food-related areas.
  • Stacking received merchandise on pallets or carts.

Qualifications and Experience:
  • Tertiary-level education and designation such as ACCA Level One, CAT, or a college/university diploma.
  • Previous warehouse experience with at least one (1) year of resort experience.
  • Critical and analytic thinking.
  • Ability to multitask.
  • Strong numeracy skills.
  • Proficient computer skills.
  • Strong technical skills.
  • Knowledge of health and safety protocols.

Moon Palace Jamaica is seeking to engage a qualified and experienced Chief Steward to join our dynamic team.

Role Description

This is a full-time on-site role located in Ocho Rios for a Chief Steward. The Chief Steward will coordinate the general cleaning of kitchens according to hygiene and health parameters. The incumbent will also ensure the proper functioning of kitchen equipment, control of operating equipment, inventories and correct use of chemical products.

The suitable candidate should possess the following:

Duties & Requirements:

  • Ensure that hygiene procedures are carried out to guarantee the proper handling of food and beverages.
  • Ensure that appropriate cleaning, recycling and composting programs are carried out.
  • Achieve compliance with the area's budget, properly managing resources.
  • Control and coordinate preventive activities regarding safety and proper use of products and equipment based on procedures, as well as acting and following up in case of accidents.
  • Follow up on the correct application of standards in the department's processes as well as audits.
  • Provide team members with the necessary equipment to correctly carry out their functions.
  • Ensure that employees follow the established rules and policies, properly wear safety equipment and work in a coordinated and effective manner.
  • Train stewards on the safe handling and cleaning of machinery and chemical products.
  • Monitor and control supply and chemical consumption.
  • Provide the necessary support to the Food and Beverage department.
  • Perform other related task as needed to support the hotels objective.

Experience and Qualification:
  • Three (3) - (4) four years’ experience as a Chief Steward
  • Bachelor's Degree in Food & Beverage Management or related fields.
  • Experience Managing a large Team
  • Valid Food Handlers Permit
  • Must be HACCP Certified
  • The ability to use Office Suite
  • Knowledge of SAP would be an asset
