The Loss and Prevention Manager will be responsible for providing strategic leadership in the physical protection and security of property and assets, and the safety of all Members, Guests and Employees.

Job Summary:

The Tryall Club is seeking a highly experienced and strategic Loss Prevention and Safety Manager to lead its security, safety, and loss prevention operations. The successful candidate will be responsible for ensuring the physical safety of all Members, Guests, Employees, and property assets. This includes oversight of security services, fire safety systems, accident and crime prevention measures, contractor and vendor compliance, and disaster preparedness programs.

The role demands a proactive leader with extensive experience in emergency response, safety audits, incident investigations, and risk management. The incumbent will also be expected to coordinate and conduct regular drills, training sessions, and inspections to maintain a safe and secure environment throughout the property.

The Thai Chef is responsible for the preparation, production, and presentation of authentic Thai dishes that meet the high culinary standards of The Tryall Club (Montego Bay, St. James). This will be a 6 months fixed term contract.

Job Summary
The Thai Chef is responsible for the preparation, production, and presentation of authentic Thai dishes that meet the high culinary standards of The Tryall Club. This role requires expert knowledge of traditional Thai ingredients, cooking techniques, and plating. The ideal candidate will also assist with private dining, special events, and collaborate closely with the culinary team to deliver memorable guest experiences.

Key Responsibilities

  • Oversee daily operations of the Thai section, ensuring consistency and high quality
  • Prepare and present authentic Thai dishes using traditional techniques and ingredients
  • Develop and maintain Thai menus for regular service and special event
  • Monitor inventory and ensure the freshness and quality of all Thai-specific ingredients
  • Maintain strict hygiene and food safety standards in compliance with health regulations
  • Train and motivate kitchen staff in Thai culinary techniques
  • Work collaboratively with other chefs and departments during peak service periods and events
  • Assist with budgeting, forecasting, and food cost control
  • Ensure clear and effective communication with service staff to exceed guest expectations

Qualifications & Experience
  • Culinary Certificate or Diploma in Culinary Arts / Food & Beverage Management
  • Minimum 5 years’ experience as a Thai Chef or similar role specializing in Thai cuisine
  • Strong command of Thai herbs, spices, and ingredient
  • Proven ability to create authentic and innovative Thai dishes
  • Valid Food Handler’s Permit
  • Exceptional organizational, time management, and communication skills
  • Knowledge of budgeting, inventory, and food cost management
  • Ability to work in a team and provide hands-on training to junior staff
  • Computer literacy for kitchen operations and menu planning
  • Must possess a positive attitude, strong work ethic, and passion for culinary excellence

We are seeking a skilled and detail-oriented Carpenter to join our hotel’s maintenance team. The Carpenter will be responsible for constructing, repairing, and maintaining various wooden structures and fixtures throughout the hotel to ensure a safe, comfortable, and aesthetically pleasing environment for our guests and staff.

Key Responsibilities:

  • Perform repair and maintenance of doors, windows, furniture, flooring, paneling, partitions, and other wooden fixtures.
  • Install and assemble cabinetry, shelves, countertops, and other woodwork as needed.
  • Repair or replace damaged woodwork in guest rooms, public areas, and back-of-house spaces.

Position Summary:

The Housekeeping Coordinator plays a key administrative and organizational role in supporting the housekeeping department. This individual ensures that housekeeping operations run smoothly by managing communications, coordinating staff schedules, maintaining inventory, and keeping accurate records. The coordinator serves as a liaison between the housekeeping team, front office, and maintenance to ensure a high standard of cleanliness and guest satisfaction.

  • Assign and monitor daily room cleaning tasks and special assignments.

Kitchen Manager (Montego Bay, Jamaica) - Margaritaville Caribbean


 POSITION SUMMARY

Directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion and cost control, and sanitation and cleanliness.


ROLE DESCRIPTION/COMPETENCY:
  • Supervises kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures.
  • Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards.
  • Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas.
  • Responsible for training kitchen personnel in cleanliness and sanitation practices* Trains crew members in safety procedures and supervises their ability to follow loss prevention policies to prevent accidents and control costs.
  • Uses available on the job training tools for associates; supervises on-going training initiatives and conducts training when appropriate.
  • Ensures that regular on-going communication is happening with crew members to create awareness of business objectives and communicate expectations, recognizes performance and produces desired results.
  • Celebrates successes and publicly recognizes the contributions of crew members; ensures recognition is taking place on all shifts. Participates in an on-going recognition program
  • Knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures
  • Participates in progressive discipline procedures. Ensures policies are administered fairly and consistently, disciplinary procedures and documentation are completed according to Standard Operating Procedures (SOPs).
  • Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.
  • Operates and maintains all department equipment and reports malfunctions.
  • Assists with an effective kitchen equipment repair and maintenance program.
  • Purchases appropriate supplies and manage inventories according to budget
  • Comprehends budgets, operating statements and payroll progress reports as needed to assist in the financial management of department.
  • Fill in where needed to ensure guest service standards and efficient operations.
  • Interacts with guests community, company representatives, vendors and local education systems as needed
  • Creates an atmosphere of guest first service constantly looking for way to improve the atmosphere for internal and external guest stays focused on the mission of giving each guest the Best. Day. Ever.

SUMMARY

The leading luxury Golf and Villa Club is currently seeking an experienced and boundaryless Sous Chef to be a part of our Food and Beverage Restaurant team. The Sous Chef will be responsible for all food planning, design and preparation including, but not limited to, menu and recipe creation, food and ingredient purchasing, kitchen organization and hygiene. The incumbent is required to maintain the highest level of professional food quality and sanitation standards for all restaurants/events.

Qualifications and Requirements:
  1. Diploma or Culinary Certificate in Food & Beverage Management
  2. Five (5) years of Supervisory experience in related field
  3. Food handling certificate.
  4. Knowledge of food cost controls.
  5. Must have the ability to interact with diverse groups of clients.
  6. Must possess the ability to manage, train and motivate staff.
  7. Must be customer service oriented.
  8. Excellent communication skills in oral and written forms
  9. Have positive work ethics and attitude.
  10. Effective organization and time management skills
  11. Must have experience with budgeting, forecasting and other cost analysis.

Assistant Pastry Chef (Montego Bay, Jamaica) - Secrets/Breathless Resorts & Spa


Job Summary:

We are seeking a creative and detail-oriented Assistant Pastry Chef to support the Pastry Chef in the preparation, production, and presentation of high-quality pastries, desserts, and baked goods for our guests. The ideal candidate will have a passion for patisserie, strong organizational skills, and the ability to maintain high standards in a fast-paced hotel kitchen environment.

Key Responsibilities:
  • Assist the Pastry Chef in the daily operations of the pastry kitchen.
  • Reports to Executive Chef and Executive Pastry Chef
  • Prepare and bake a variety of pastries, desserts, breads, and other baked goods according to hotel standards.
  • Contribute ideas for new dessert items and seasonal menus.
  • Ensure proper portion control and presentation of all pastry items.
  • Monitor and maintain cleanliness and organization of the pastry station and storage areas.
  • Assist in ordering, inventory management, and receiving of pastry-related supplies.
  • Ensure compliance with food hygiene, safety, and sanitation standards.
  • Train and supervise junior staff and pastry apprentices as needed.
  • Collaborate with the culinary team to ensure smooth service during functions, banquets, and a la carte service.

Qualifications:
  • Proven experience as a Pastry Cook, Commis Pastry, or Assistant Pastry Chef in a hotel, restaurant, or bakery.
  • Formal culinary or pastry education is preferred.
  • Strong knowledge of pastry techniques, baking processes, and dessert presentation.
  • Excellent time management and multitasking skills.
  • Ability to work flexible hours, including weekends and holidays.
  • A passion for food, creativity, and attention to detail.
