Kitchen Manager (Montego Bay, Jamaica) - Margaritaville Caribbean


 POSITION SUMMARY

Directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion and cost control, and sanitation and cleanliness.


ROLE DESCRIPTION/COMPETENCY:
  • Supervises kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures.
  • Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards.
  • Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas.
  • Responsible for training kitchen personnel in cleanliness and sanitation practices* Trains crew members in safety procedures and supervises their ability to follow loss prevention policies to prevent accidents and control costs.
  • Uses available on the job training tools for associates; supervises on-going training initiatives and conducts training when appropriate.
  • Ensures that regular on-going communication is happening with crew members to create awareness of business objectives and communicate expectations, recognizes performance and produces desired results.
  • Celebrates successes and publicly recognizes the contributions of crew members; ensures recognition is taking place on all shifts. Participates in an on-going recognition program
  • Knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures
  • Participates in progressive discipline procedures. Ensures policies are administered fairly and consistently, disciplinary procedures and documentation are completed according to Standard Operating Procedures (SOPs).
  • Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.
  • Operates and maintains all department equipment and reports malfunctions.
  • Assists with an effective kitchen equipment repair and maintenance program.
  • Purchases appropriate supplies and manage inventories according to budget
  • Comprehends budgets, operating statements and payroll progress reports as needed to assist in the financial management of department.
  • Fill in where needed to ensure guest service standards and efficient operations.
  • Interacts with guests community, company representatives, vendors and local education systems as needed
  • Creates an atmosphere of guest first service constantly looking for way to improve the atmosphere for internal and external guest stays focused on the mission of giving each guest the Best. Day. Ever.

KNOWLEDGE, SKILLS, AND ABILITIES:
  • Be able to communicate clearly and effectively.

JOB REQUIREMENTS:

EDUCATION AND EXPERIENCE:
  • Tertiary education in the culinary field
  • At least 5 years culinary experience in a fast paced food and beverage organisation

Job Summary:
We are seeking a skilled and creative Baker to join our culinary team. The ideal candidate will be responsible for preparing a wide variety of baked goods, including breads, pastries, cakes, and other desserts, ensuring high standards of quality and presentation. The Baker will work closely with the kitchen team to support the overall dining experience offered to guests.

Key Responsibilities:

  • Prepare and bake a variety of bread, rolls, pastries, cakes, cookies, and other baked goods for daily hotel operations, including breakfast buffets, events, and restaurant service.
  • Follow established recipes and maintain consistent quality and portion control.
  • Ensure all baked goods are fresh, visually appealing, and meet hotel standards.
  • Monitor stock levels of baking ingredients and communicate supply needs to the kitchen supervisor or purchasing team.
  • Maintain cleanliness and organization of the bakery area in compliance with food safety and hygiene regulations.
  • Assist in menu planning and development of new bakery items as needed.
  • Operate baking equipment such as ovens, mixers, proofers, and sheeters safely and efficiently.
  • Label, date, and store food properly to prevent waste and contamination.
  • Work collaboratively with the kitchen team and support other culinary tasks when required.

Qualifications:
  • Proven experience as a Baker in a hotel, restaurant, or commercial bakery.
  • Formal culinary or baking/pastry certification is preferred.
  • Knowledge of food safety standards and kitchen sanitation procedures.
  • Ability to work early morning shifts, weekends, and holidays as required.
  • Creative, detail-oriented, and able to work under pressure in a fast-paced environment.
  • Strong organizational and time-management skills.

The Tryall Club is seeking a skilled and experienced Plumber to join our team. The ideal candidate will be responsible for installing, repairing, and maintaining pipes, fixtures, and other plumbing systems to ensure efficient water distribution and waste management.

Under general supervision of the Maintenance Coordinator, responsible for installing, repairing and maintaining pipes, fixtures and other plumbing equipment and facilities used for water distribution and waste water disposal throughout the property.

REQUIREMENTS/QUALIFICATIONS
  • Certificate in Plumbing Technology from HEART/NTA or equivalent qualification.
  • One to three years of maintenance experience within the specialized trade area
  • High School Education
  • Certification from a HEART or National Training Institute

Knowledge of:
  • Principles, procedures, skills, tools and materials used in specialized trade areas.
  • Uses and purposes of general maintenance tools and equipment.
  • Applicable codes, rules and regulations pertaining to trade areas.
  • Safe work practices.
  • Basic first aid.
DUTIES AND RESPONSIBILITIES:
  • Assemble, install, maintain and pressure test all pipes, fittings and fixtures of heating, water, drainage, sprinklers and gas systems according to plumbing codes, schematic diagrams, blue prints, manuals and other specifications.
  • Ensures that specified plumbing equipment, fixtures and facilities are serviced in compliance with the maintenance schedule.
  • Conducts periodic maintenance checks at Sewage Treatment Plant, manholes, grease traps and septic pits.
  • Accepts fault report and requests from customers and submits to the Dispatch Clerk.
  • Diagnoses malfunctioning fixtures and appliances such as sinks, tubs, toilets and water heaters.
  • Replaces faulty plumbing components of machines.
  • Performs driving duties when requested and ensures that assigned vehicle is used safely and strictly within the guidelines set out by the Club.
  • Monitors records and implements water conservation opportunities throughout the Club.
  • Inspects jobs upon completion and ensure areas are clean.
  • Liaises with the Supervisor and updates them on the progress of repair and maintenance work.
  • Ensures that safety regulations and guidelines are adhered to.

Maintenance Service Technician (Montego Bay, Jamaica) - Margaritaville Caribbean Group


 
The maintenance technician effects minor repairs, fixes, and maintains mechanical equipment, buildings, and machines. Tasks include plumbing work, painting, flooring and walls repair and upkeep, electrical repairs, and heating and air conditioning system maintenance


FUNCTIONS AND RESPONSIBILITIES:

  • Conducting routine inspections of premises and equipment.
  • Performing routine preventative maintenance.
  • Handling basic repairs and maintenance issues.
  • Overseeing contractors when professional repairs are necessary.
  • Diagnosing mechanical issues and correcting those in their scope and advising the general manager of major contractual requirements.
  • Repairing machines, equipment, or structures as necessary.
  • Monitor repair parts inventory to ensure adequate levels at all times.
  • Attention to building structural soundness, aesthetics, and upkeep.
  • Achieve company objectives in the appearance of facility cleanliness.
  • Procure, manage, and log the department’s inventory, which includes parts and supplies.
  • Performs any other duties as assigned by the Director of Maintenance or Sr. Director, Facilities and Construction.
KNOWLEDGE, SKILLS, AND ABILITIES:
  • Be able to communicate clearly and effectively.
  • Excellent guest service skills.
  • Ability to work a flexible schedule, including some nights and/or weekends and be part of a 24 hour on call team.
  • Strong work ethic.
  • Must pay good attention to detail.
  • Possess strong organizational and multi-tasking skills.
  • Ability to work well with others
  • Ability to handle hand and power tools .
  • Ability to read and understand repair manuals, or parts catalogs as necessary
  • Computer Skills to include: Excel & Word.
  • Ability to take apart machines, equipment, or devices to remove and replace defective parts
  • Ability to learn new functions, procedures.

JOB REQUIREMENTS:
  • Be able to manage location R & M requests.
  • Must have exceptional grooming habits.
  • Proficient in evaluating equipment’s status.
  • Make good minor wall and floor defects.
  • Evaluate electrical issues and effect repairs.
  • Physical stamina and dexterity.
  • Handling of power tools, drain and cleaning chemicals.
EDUCATION AND EXPERIENCE:
  • High school and vocational training certificate
  • Diploma in HVAC functions or equivalent
  • At least three (3) years experience in skilled maintenance profession

Responsibilities:

  • Electrical Systems: Install, maintain, and repair electrical wiring and components related to refrigeration and HVAC systems.
  • Documentation: Maintain accurate records of maintenance, repairs, and installations.
  • Safety: Adhere to all safety regulations and company policies.
  • Customer Service: Provide excellent customer service and communicate effectively with clients and team members.
  • Mentorship: Provide guidance, training, and mentorship to junior technicians.
  • Inventory Management: Manage and maintain an inventory of refrigeration and HVAC parts and supplies.
  • Emergency Response: Respond to emergency calls for refrigeration and HVAC system repairs.
  • System Optimization: recommend upgrades and optimize existing systems for better efficiency.
  • Reading and interpretation: Read and interpret blueprints and schematics.
Qualifications:
  • Associate's degree or technical diploma in HVAC or refrigeration technology. or Proven experience as a Refrigeration Technician, with a minimum of 10 years of experience in commercial refrigeration and HVAC systems
  • Experience with energy-efficient refrigeration and HVAC systems.
  • Strong knowledge of refrigeration principles, electrical systems, and HVAC systems.
  • Proficiency in using diagnostic tools and equipment.
  • Excellent troubleshooting and problem-solving skills.
  • Ability to read and interpret technical manuals and schematics.
  • Strong communication and interpersonal skills.
  • Ability to work independently and as part of a team.
  • Valid driver's license and reliable transportation.
  • Knowledge of safety regulations and procedures.
  • Experience with various commercial refrigeration and HVAC systems (e.g., walk-in coolers, freezers, ice machines, rooftop units).
  • Bilingual is Preferred

The primary duty of a lifeguard is to enforce safety rules and maintain swimmer safety. Lifeguards monitor water conditions and guest behavior, monitor the water for danger, enforcing safety rules and paying close attention to swimmer activities and behavior. Lifeguards may issue warnings when a visitor is creating an unsafe environment.

Education and Experience (Minimum Requirements)

  • Diploma in Administration
  • Computer Literacy – mastery of Microsoft office, understanding of POS system

Horseback Guide (Montego Bay, Jamaica) - Chukka Caribbean Adventures


Core Function:

  • Provide accurate tour information to our clients. Consistently provide safe fun-packed experiences and care for horses and equipment.
Education and Experience: (Minimum Requirements)
  • Two CXC subjects including English
  • A foreign language would be an asset
  • At least two years experience in Horse Care
Specialised Knowledge, Skills and Abilities
  • Knowledge of Horseback Riding Operating Standards

Tour
  • Assist with the maintenance of the tour area and facilities, thus ensuring that they are clean and free of litter.
  • Groom horses and arrive at least 15 minutes before each tour time at the pony-line.
  • Monitor clients closely during tour to ensure that they are complying with the safety practices. Communicate all breaches to your trail master in a timely manner.
  • Describe tour points of interest to guests and respond to questions.
  • Conduct trail inspection as required. Inspection must be done each morning and recorded.
Horses
  • Collect horses from pasture each morning.
  • Perform grooming duties such as washing, brushing, clipping and trimming coats. Mineral oil must be added to coat on rainy days.
  • Clean, organize and disinfect horse stables and horse equipment such as saddles and bridles. Stables must be cleaned each day and saddles must be cleaned twice per week.
  • Clean water troughs each day and ensure that horses are fed with water daily.
  • Examine and observe horses in order to detect signs of illness or injury. Inform supervisor of horse sickness or injuries. Maybe required to provide treatment for minor injuries.
  • Mix feed for horses. Feed and water horses according to feeding instructions. Two times per day.
  • Saddle horses and ensure that they are shoed when required.
  • Exercise horses in order to maintain their physical health.
  • Ensure that blankets and girths are kept clean. Blankets must be washed at least once per week and girths at least three times per week.
  • Apply coppertox to horse feet during rainy seasons.
  • Assist with the removal of feed or hay upon arrival to the farm to the container.
  • Tick wash horses every two weeks.
Grooming and Deportment
  • Ensure that you are properly groomed and neatly dressed in company uniform at all times.
  • Conduct oneself consistent with the policies and procedures of the company. Your action must always reflect favourably on the image of Chukka Caribbean Adventures.

Meetings
  • Attend monthly meetings and all others as required.
  • Perform other related duties assigned from time to time.
Authority To:
  • Remove from the tour anyone who breaches the safety procedures.
