Key Responsibilities:
  • Prepare and cook meals as per standard recipes and presentation guidelines.

Executive Pastry Chef (Montego Bay, Jamaica) - Ocean Coral Spring/Eden Bay

 

We are seeking an experienced and innovative Executive Pastry Chef to lead our pastry department. The ideal candidate will be responsible for overseeing all aspects of pastry production, ensuring the highest quality in preparation, presentation, and flavor. This role requires a creative professional with strong leadership skills to manage and inspire a team, contributing to outstanding guest satisfaction.

Key Responsibilities:

Pastry Production Management:

  • Direct and supervise the production of all pastry and dessert items.
  • Ensure consistent preparation of innovative and creative pastries of the highest quality.
  • Collaborate on menu development with the Executive Chef and management team.

Inventory and Cost Control:
  • Establish systems to monitor the use of raw materials, ensuring efficient consumption.
  • Manage inventory levels and conduct regular stock assessments.
  • Approve kitchen requisitions based on inventory needs, event schedules, and customer demand.
Team Leadership and Development:
  • Coordinate with Human Resources for the recruitment and selection of pastry staff.
  • Train, mentor, and evaluate pastry team members to foster professional growth.
  • Schedule staff shifts and manage time-off requests, maintaining optimal staffing levels.
Quality Assurance and Compliance:
  • Maintain high standards of hygiene and sanitation in the pastry kitchen.
  • Ensure compliance with all food safety regulations and company policies.
  • Oversee the cleaning and maintenance of kitchen equipment.
Collaboration and Communication:
  • Work closely with the Food and Beverage Manager and Purchasing Manager to set purchasing standards.
  • Participate in event planning and execution, providing pastry expertise for banquets and special occasions.
  • Communicate effectively with staff and management to ensure smooth kitchen operations.

Additional Responsibilities:

  • Uphold a high sense of responsibility, honesty, and objectivity in all tasks.
  • Perform other related duties as assigned to support the overall success of the establishment.
Qualifications:

Education:
  • Diploma or Degree in Culinary Arts, Pastry Arts, or a related discipline.
Experience:
  • Minimum of 10 years in a senior pastry leadership role.
  • At least 4 years of experience in multi-outlet kitchens with strong operational knowledge.
Skills and Abilities:
  • Proactive and self-motivated with excellent time management skills.
  • Strong decision-making abilities and attention to detail.
  • Exceptional creativity and passion for pastry arts.
  • Ability to maintain high standards and set professional benchmarks.
  • Excellent interpersonal and communication skills.
  • Ability to build strong relationships with guests and colleagues.
  • Strategic thinking with the ability to innovate and adapt.
  • High level of confidentiality and professionalism in all duties.
