Pastry Chef 

We are looking for a creative pastry chef to be responsible for crafting delicious desserts and confectionery, designing menus, and developing new recipes for the pastry section of our Kitchen, while managing a dynamic, talented team to achieve total guest satisfaction through our pastry.

Duties, Responsibilities and Expectations:
  • Create and prepare dessert menu items
  • Order food supplies for dessert menu items
  • Prepare and submit budgets
  • Supply pastry, (bread and dessert) to all food and beverage outlets
  • Supervise and train the Pastry Team
  • Schedule staff task per day
  • Research and develop new recipes
  • Plate desserts for A La Carte restaurants
  • Record shortages and any other relevant issue affecting production
  • Check temperature of refrigerators daily
  • Check expiry dates of stock
  • Conduct inventory
  • Ensure maintenance of clean work area at all times
  • Maintain cost control
The right candidate will possess:
  • Extremely high quality standard oriented chef to be able to satisfy local and international traveler guests with high expectations with new exciting products/ingredients to try.
  • Aware of the sourcing for authentic products as it will redefine the success of the restaurant.
  • Pastry Chef will ensure that the menu product selection is tailored to our primary target guests, the local residents, hotel guests, international traveler guests including the local expatriate community and obviously pastry lovers.
  • Knowledge of HACCP expectations and ensure high standard of hygiene and work methods are met.
  • Understands and has knowledge of purchasing control systems.

Overall Cuisine Style & Approach
  • Food approach/execution will be an upscale Pastry style of cuisine. Chefs will use authentic ingredients with a new technique approach with interesting twist of combinations of ingredients, texture and taste. Food will be executed/enhanced by a well seasoned, experienced skilled chef. This cuisine style will be matching with the contemporary interior design of restaurants and bars to satisfy diverse lifestyles.
  • The Pastry Chef will be required to come up with his signature, home town, and nostalgia dishes including execution/gimmick in order to create the wow factor. This will provide the guest a moment of an unexpected pleasure.
Qualification and Experience:
  • Degree in Culinary Studies or related field
  • Must have at least ten years' of experience in creative pastry cuisine
  • Must have worked at least 4 years in a 5-star international hotel in the last 10 years of employment in the Caribbean as an Executive Pastry Chef.
  • Must have a deep and clear understanding of Pastry style, history, tradition, culture

Restaurants Manager/Maitre D' (Hanover, Jamaica) - Grand Palladium Hotels & Resorts

 

The primary goal of the Restaurants Manager/Maitre D' is to be responsible for the overall atmosphere of all the restaurant outlets (14); supervising and ensuring smooth running of the restaurants ensuring that excellent service quality is delivered and complete adherence to the hotel policy and standards.

Summary of Duties & Responsibilities:

  • Direct and delegate tasks to team members in order to ensure guests have a high quality dining experience
  • Responsible for the appearance, service standards and on the job day-to-day training of positions such as waiter, hostess and waitresses.
  • Oversees and proactively addresses guest queries and complaints and providing the Directors with updates
  • Recruits, trains, schedules and supervise restaurant staff
  • Maintains stock levels and order supply accordingly
  • Proactively strategize with management to ensure maximum seating, staffing needs for the restaurant
  • Conduct briefings, evaluations and motivational talks with supervisors and line staff as necessary
  • Routinely support other areas of the restaurant when needed, including hosts and waiters

Qualifications and Requirements:
  • Must have minimum Level 3 or 4 HEART Certification or from another recognized training institution.
  • Three (3) to five (5) years’ experience in the hospitality industry (preferably a five star or five diamond establishments).
  • Chefs-Must be versatile in cooking ALL MEALS (International and Gourmet Cuisine). A sound knowledge of Pastry Making would be an asset.
  • At least five (5) years hands-on experience in the delivery of meticulous guest service.
  • Experience managing five (5) or more persons.
  • The willingness and be ability to sleep over (nights) at the villa.
  • A valid Food Handlers Permit.
  • Must have excellent interpersonal, communication and customer service skills.

Knowledge of horticulture to create various landscape effects through the placement of shrubs, flowers, trees, and other plants.

Qualifications and Requirements

The ideal candidate must possess:
  • Certification from a recognized training institution.
  • At least five (5) years hands-on experience with gardening techniques.
  • Three (3) - Five (5) years landscaping or Gardener experience.
  • Landscapers need an eye for detail to notice when mulch needs to be replaced or replenished. To employ turf management techniques to make sure mulch is spread evenly.
  • Ability to mow lawn either by hand or using a riding lawnmower
  • To use knowledge of weed maintenance techniques to develop and stick to a regular maintenance schedule.
  • To know the ideal planting conditions for each plant, as well as how to care for them. Knowledge of pesticide and fertilizer care and use.
  • Knowledge of pool maintenance a plus.
  • Excellent interpersonal skills.
  • The willingness and the ability to sleep over (nights) at the villa.
  • Experience as a landscaper that has worked in a four (4) star or five (5) diamond properties.

Assistant Chief Steward (Hanover, Jamaica) - Grand Palladium Hotels & Resorts


The primary goal of the Assistant Chief Steward is to provide sanitation management/services as well as set up and break down of all events (tables, chairs) while adhering to company policies and complying with budget restraints. The Assistant Chief Steward assists the Chief Steward in promoting company mission, culture and philosophy. He/she will support the Chief Steward in the leadership of the team and ensuring that all standards are maintained.

Summary of Duties & Responsibilities:
  • Implement, maintain and monitor department standard operating procedures and develop as needed.
  • Ensure the efficiency of the team by providing supervision to the team- scheduling employees for work, conducting evaluations, provide coaching and recommend disciplinary actions.
  • Oversee timely set-up, break-down and maintenance of the equipment.
  • Responsible for the organization, cleaning, sanitation standards and consistent maintenance of all front of the house (FOH) areas, including bars, restaurants and storerooms.
  • Responsible for managing all FOH equipment maintenance and repairs.
  • Maintenance, cleanliness, sanitation and upkeep of all FOH storage areas.
  • Compiles and maintains records of quantity, type and value of circulating inventory in establishment.
  • Verifies clerical computations against physical count of inventories and adjusts errors in computation or count or investigates and reports reasons for discrepancies.

Assistant Front Office Manager (Hanover, Jamaica) - Grand Palladium Resorts

 

The primary goal of the Assistant Front Office Manager is to assist in ensuring the smooth operation of the department in regards to supervising the department personnel, staffing, training, report preparation, reservation management and resolving customer complaints while providing excellent customer service.

Summary of Duties & Responsibilities:
  • Assists in interviewing, hiring, orientation and training new front office staff and newly promoted staff.
  • Assists in organizing the staff scheduling for the department
  • Supervise the fulfillment of all functions of the Reception Desk according to company standards
  • Prepares staff adjustments for payroll
  • Generate front office reports as required/ assigned
  • Assist in the training of front desk staff
  • Conduct/ participate in departmental staff meetings
  • Conduct inspections on hotel accommodations
  • Implement and maintain quality control measures
  • To coordinate the daily fulfillment of rooms with the Executive Housekeeper, according to the priorities of the operation
  • To ensure and control rooms blocked for preventative maintenance or special repairs, hospitality use and room changes.
  • Liase with other departments as it relates to ensuring exceptional guest experience
  • Address guest complaints and follow up on corrective measures taken
  • To provide information as required to guests relating to facilities and services offered at the resort- promotions, rates, room upgrades and day passes
  • To ensure that all clients are issued with the correct arm band as an indication of them being authorized house guests
  • To ensure that all check in procedure is carried out according to established standards
  • To control and supervise the end of shifts of cashiers at the reception desk
  • To check and follow up on no shows and over bookings while ensuring rooms are assigned in family trips, groups and special requests
  • Conduct evaluations and disciplinary actions as deemed necessary
  • Perform other duties as assigned

Reservations Agent (Green Island, Hanover, Jamaica) - Princess Hotels & Resorts


 Job Summary

The successful candidate will be responsible for providing excellent customer service to our guests, ensuring all reservations are handled efficiently and accurately.

Duties and Responsibilities:
  • Respond to customer inquiries via telephone, email, and in-person regarding reservations and booking requests.
  • Process customer reservations and bookings in the reservations system.
  • Monitor and update customer information in the reservations system.
  • Ensure all customer requests are met in a timely and courteous manner.
  • Assist with the preparation of reports and other administrative duties as required.
  • Provide assistance with other customer service related duties as needed.
  • Ensure all policies and procedures are adhered to.

Minimum Requirements
  • High school diploma or equivalent.
  • Previous experience in a customer service or reservations role.
  • Excellent communication skills, both verbal and written.

Italian Specialty Chef (Green Island, Hanover, Jamaica) - Princess Hotels & Resorts

The successful candidate will be responsible for creating and preparing high-quality Italian cuisine for our customers.

Responsibilities:
  • Create and prepare Italian-style dishes, including pastas, sauces, antipasti, and desserts.
  • Prepare and cook dishes according to recipes and presentation specifications.
  • Monitor food stock and place orders as needed.
  • Ensure all food is prepared in a safe and sanitary manner.
  • Maintain a clean and organized kitchen.
  • Supervise and train other kitchen staff members.
  • Monitor food costs and portion control.
  • Ensure compliance with health and safety regulations.
  • Develop and implement new menu items while keeping abreast of current trends

Minimum Requirements:
  • At least 5 years of experience as an Italian chef, preferably in the Caribbean
  • Knowledge of Italian cuisine and cooking techniques.
  • Ability to work in a fast-paced environment.
  • Experience in large all-inclusive property
  • Excellent organizational and time management skills.
  • Excellent communication and interpersonal skills.
  • Ability to work independently and as part of a team.
